Food Service Manager
Responsible for managing MBC food service operations, including planning, preparing, and serving all meals, in compliance with federal and state requirements. Must be ServeSafe Manager Certified
This is an hourly position. Not salaried.
DUTIES AND RESPONSIBILITIES
Prepare menus based on age group, nutritional value, attractiveness, cost, and availability of food, staff, and equipment.
• Prepare and submit to Director summer menu two weeks prior to camp commencement.
• Prepare weekend adult and teen menus.
• Manage cost records.
• Prepare menus that meet the growing demands of food allergies
• Work closely with Program Directors to meet the needs of the programming from themes, new offerings, menu options, etc.
Responsible for purchase and storage of food, supplies, and equipment.
• Maintain supplier contact list and ordering systems.
• Advise Director concerning major equipment needs.
• Assist counselors and campers with plans for packing and distributing food for cookouts and special occasions.
Supervise or delegate supervision of all kitchen staff to include head chef, waitresses, dishwashers, and utility help.
• Manage staff training, including cross-training of chef in all functions of the Food Service Manager.
• Responsible for staff annual performance evaluations.
• Ensure opportunity for group devotions of staff.
• Manage staff time-off schedule.
Prepare and serve meals, snacks, and snack shop items.
• Manage staff table assignment, ensuring proper setting, service, and cleanliness.
• Manage all aspects of snack shop vending machines.
Responsible for kitchen safety and health standards.
• Maintain knowledge of and compliance with applicable state and local laws, including OSHA and NH Juvenile Camp State Statutes, concerning kitchen safety and food preparation.
• Ensure staff compliance with sanitation, health and food safety standards and regulations.
• Responsible for good housekeeping of kitchen, dining room, snack shop, hook, and cellar.
• Responsible for overall look and aesthetics of dining room, kitchen, snack shop, etc.
