Food Service Director

Highly trained food preparation specialist who utilizes their managerial and cooking skills to oversee the operations of the kitchen to guarantee all guests and campers receive optimal dining experience.

Responsibilities:
• Interview and hire staff
• Manage Disciplinary Plan with staff when needed (sometimes may result in termination) – conduct with Admin Assistant present
• Employee Performance Reviews
• Requires some cooking, but mostly prep and overseeing all kitchen operations:
o Train & Manage staff, assign specific tasks to scheduled staff
o Oversee food preparation, cooking, portion sizes, and overall presentation
o Maximize productivity
o Ensure all employees comply with health and food safety standards and regulations
• Plan and approve menus, enter into appropriate software for ordering & Guest Services information
o Plan substitutes for guests with food allergies and dietary restrictions
o Develop new recipes as needed
o Work with event coordinator for special event menu planning & presentation
• Prepare meal prep sheets for staff
• Engage with group leaders, retreat & event guests, and campers
• Establish standards for personnel performance & customer service
o Determine best meal presentation
o Ensure meal quality is maintained
o Ensure guests are served properly and in a timely manner
• Investigate & resolve complaints regarding food quality or service
o Work with cooks & servers to remedy delays in service or improvement of food quality/taste
o Communicate with Admin Assistant about quality of products being ordered and research new products when needed.
• Responsible for organization and cleanliness of kitchen
• Manage Deliveries & Inventory:
o Oversee deliveries and assign staff to put inventory away (maybe have one Shift Leader assigned to this responsibility)
o Maintain inventory lists and communicate needs to Admin Assistant
o Oversee & Assign staff to product rotation and organization
